Since I completed my kitchen remodel, I'm still without much counter space. So I skulked about the aisles at Home Depot and came up with a way to add about 4 feet of counter space. I learned that hot glue sticks immediately to laminate and it is almost impossible to cut off an extra quarter of an inch with a handsaw. (that's why the shelf is not flush with the cabinets.)
It's not perfect, and I figure since its particle board, will sag in a year or so (much like my botto), but by then, I'll come up with another solution.
